Down in the vault it is cool, and you hear your own footsteps. Then a short, hard sound: the sabre meets the neck of the bottle and the cork flies.

According to the Cape Town Magazine, that is how the Saturday cellar tour ends, with sabrage. Haute Cabrière is the home of Pierre Jourdan, a Cap Classique, and the estate also bottles wines under the Haute Cabrière name. The focus is Pinot Noir and Chardonnay. The cellar lies underground and works on the gravity-flow principle.

Achim von Arnim started growing vines here in the early 1980s, and Takuan von Arnim is now the cellar master. According to the tourism office the tasting room opens daily, and on weekdays a public cellar tour with tasting starts at 11am (as of September 2026). For a meal there is the Cellar Restaurant.

Haute Cabrière has its own stop on the Red line of the Franschhoek Wine Tram. That helps if you taste sparkling wine and would rather not drive afterwards.
